Wild yeast adds complexity to a distinctively varietal nose of tropical fruits, honeysuckle & orange blossom. As luscious and full-bodied as a white wine gets, this pairs beautifully with rich seafoods, and pork dishes.

Wine Notes

Wild yeast, meet barrel ferment. A hugely complex bouquet, heady with pineapple, white flowers, honey and spice. 18 months on full lees in 30% new French oak has resulted in a rich, and textural palate, underpinned by fresh preserved lemon acidity, and a slight savouriness to complement the tropical notes. Everything you already love about our Fumé Blanc, but elevated.

Vineyard

The high altitude of the Kuitpo vineyard in the Southern Adelaide Hills is ideal for this variety. Allowing slower ripening and giving complexity and elegance. Shallow, well drained soils also allow full concentration of flavours in the fruit and a mineral acidity crucial for this style of wine.

Food Pairing

This full-bodied wine is bold enough to stand up to fattier fish, and retains enough zesty acidity to cut through pork and poultry dishes. Try it with crispy roast pork & tangy slaw.

Cellaring

Built to last, this wine will continue to develop opulent secondary characters until 2032.
