Harvested in the cool of the morning, this fruit was immediately pressed off skins to avoid retaining any varietal pink colour. Fermented in stainless steel for maximum freshness, a non-Saccharomyces yeast species was used to start the fermentation process for the addition of complex secondary aromatic notes. Bottled very shortly after fermentation, vinified for good times.
The vineyard is an outstanding vineyard; on steep slopes, very rocky and north facing. From a tough a small vintage, but with fruit that was there is of high quality.
