A significant influence towards making this style is to press the grapes at an earlier stage of fermentation. Pressing the ferment at this stage means that less tannins were able to build up in the wine resulting in a much softer wine. Which results in a wine what allows for early release and early drinking. The wine spent a small amount of time in old french oak barrels to build some influence of oak but not to subdue the fresh, juiciness of the wine.
The vineyard is in the north of the Adelaide Hills near Kersbrook giving a cool dry climate. Gentle east facing slopes provide shallow loam soils ideal for these old vines to grow small grape bunches, giving intensity of flavour and soft tannins.
An easy drinking and elegant style which pairs well with BBQ, pizza, pasta and tapas.
Drink within 3-4 years from bottling, while the flavours are fresh and juicy.
