The cool climate of the Adelaide Hills has a strong influence on this wine, hence we have used the name Syrah for this wine to differentiate it from the more traditional Australian style of Shiraz.
Fermented on skins for 33 days together with 10% of the stalks included to add a complexity to the wine. The tannins are soft and silky from the extended fermentation resulting in a wine which has great mouth feel and elegance.
This Vineyard sits atop a wind swept ridge at just under 350m above sea level. The shallow rocky soil, non- irrigated dry farming and harsh conditions forces these vines to dig deep. Cropping at a mere 0.5 tonne per acre, the result are ultra concentrated, small berries which reflect the vineyard site.
The complexity of this Syrah gives it a wide range of food pairing. Fantastic with pizza pasta dishes, paired with mushrooms, black olives and fragrant herbs; thyme, sage and rosemary. Great with game dishes such as Kangaroo, venison or duck.
While drinking well upon release, this wine will mature well for another 12-15 years.
