We use the French term, Syrah, instead of Shiraz to describe the style of this wine. The cool climate of the Adelaide Hills has a strong influence on the style of this wine and differentiates it from many other Australian regions’ Shiraz.
The wine was fermented and held on skins for 33 days. Together with 10% of the stalks included in the ferment has created a beautifully balanced, complex and soft wine. The tannins are soft and silky from the extended skin contact making interesting and elegant wine
Great intensity of flavours. Aromatic fruit, violets, rhubarb and stewed black cherries with fresh ground spices. Medium bodied but great intensity of flavours. Fresh red berries, cherry and raspberry and interesting spices derived from the cooler vineyard microclimate and complexities of pepper from the addition of stalks in the fermentation vessel.
